choux pastry for GCSE exam

This year's Food Technology GCSE exam is seemingly based around eggs and pastry... and buffet food. At first when I saw the hint sheet, I was dreading it. But I have to say, it's been really fun revising with the kids. They are a good group (now) who want to do well (now).
So far I have demonstrated mayonnaise, a lemon meringue pie, brought in some party food and they have made Bakewell tarts.  This week I will demonstrating Choux pastry. I would never recommend a chocolate eclair practical. Too many things to go wrong. So just a demo.  I had a run through tonight. They went well. Served 'em up with some thick homemade creme anglaise and coated 'em in dark chocolate. So nice. Mamma's boy devoured them.
