The focus on lunch has intensified this week. Sunday I taught the girl how to make welsh cakes. We shaped them as smiley stars to pack in her school lunches. She enjoyed that. Being conscious that the nanny state I live in would not approve of such things, I made the cakes with wholemeal flour. Used my new tiffin today. In the top a creamy coconut curry with lentils, butternut squash, sweet potato, etc. In the bottom some sushi rice and eggs with vegetables for garnish. More fun making it than eating.
